So you can place a hold on the card and tell Stripe to authorize only, after the order has been delivered, then you capture the funds,

Is there a requirement to use invoicing? You can't do auth/capture with invoicing

no requirement, im doing it now without invoicing, but the invoicing is nice/much easer than our internal invoicing
but thanks, so long story short, the answer is no. but what would a company like doordash do? just capture every charge immediitaly? or do they just bypass invoicing completely from stripe

Can't speak specific to Doordash, but we don't currently offer invoicing for one-time payment unless you're using Invoicing (but that doesn't support auth/capture which is what you're describing)
