Simple monthly subscription to use the app
if for example you're selling a subscription to something like a monthly "loot crate" thing or groceries or something like that, it might be ok.
in that case(selling access to app features itself) then I doubt Apple will let you not use their IAPs, that's a digitial good.
Is there a way to use IAP with stripe or will I need to build an apple integration?

Looking at apps like netflix that redirect you to there web based app for account management is that a work-around?
depends on what Apple and Google decide in their app review, all you can do is read their policies/submit your app/appeal
