Is there any way to bypass or mock all those verification details for test mode?

You can create an account link to update the particular. In test mode, the onboarding page will prompt you to fill in test data, you don't need to update with actual documents

I think I followed that approach, the test account I used I don't have admin privileges, perhaps my admin needs to approve this? If so, I can reach out quickly for it :), or is this a verification on Stripe side?

You need to ask whoever created this connected account to create an account link for you

oh I see, I'll need to regenerate the link then, I created and configured everything that was asked, and since it was a test I lost it
I'll recreate another test account

I used the dashboard instead of the code/api, is that the same thing we are talking about?, after this a link is generated to configure the account

Creating an Express account via Dashboard is equivalent of using OAuth flow (https://stripe.com/docs/connect/oauth-express-accounts) which is not recommended.
You should create the connected account via API instead
