you'd have to create your own inputs I guess. you could either do that on user registration or before creating the order

Hmm okay it's making a bit more sense now.

So first I need to collect the address of the user (right now just selling in EU, so country is enough as per https://stripe.com/docs/tax/customer-locations )

but then, if they say that they're purchasing as a business, I want to collect their VAT tax id.
I can do this in my own form ('are you buying as a business?' if yes: show a vat input field).

However, I think stripe Tax can validate these ID's for me, can't it?

and when you create the order you would specify the customer which copies the tax info from the customer to the order

if you need any more help about validating tax ids I would strongly suggest contacting support https://support.stripe.com/?contact=true they're better equipped to answer your Stripe Tax questions

Sadly my experience with the normal Stripe support has been terrible. My experience here is much much better. They could never resolve my issue and end up putting it forward internally, which I guess ends up at the dev team anyway.
