I ask cause I see logs on the customer, but I don't see any webhook logs showing that it was sent, which feels like a bug/weird behaviour to me
never mind the event is not on the webhook
I am guessing there is no way to resent or dispatch an event that triggers a webhook?

Can you share an object id with me so I can further investigate this?
You can resent events via teh Stripe CLI: https://stripe.com/docs/cli/events/resend or manually, on the Stripe Dashboard
Select Developers > Webhooks, then find the webhook your working with and press the little "resend" icon.
