Always use invoice.paid, ignore the other one it's deprecated, we just haven't removed it yet.
invoice.paid is sent every time an invoice is paid, even if it's "paid out of band" while the other one is only sent if it's paid on Stripe.

I read that but was still a little confused how that could happen. Is that like if you're a physical business and some one gives you cash instead of paying online?

yes for example, or they pay you via check or any other way

gotcha gotcha - that isn't really possible for my business which is why it was hard to conceptualize, but i get it now
