expectation： if a customer signs up on May 1 for a $100 price, they'll be billed $100 immediately. If on May 15 they switch to a $200 price proration with "no:, then whether bill customer $50 immediately, on June 1 they'll be billed $200?

You would want to use proration here

If you update the subscription and use a proration_behavior of always_invoice, that would allow you to send a bill for $50 when you make that update
