When you say "Payment Dashboard" do you mean your Stripe Dashboard?
And are you referring to the "All payments" tab?

Currently shows customer’s email address - I cannot figure out what field I should be capturing at charge to get it to change to full name

The Payments tab of the Dashboard won't show the customer name. It either shows the Description if you set that and the email or ID of the Customer.
