Also one final question, is it possible to invoice a company and not a "private person" if they want to use it as a deduction?
In Mexico when creating invoices it usually requires a company's "RFC" (sort of like a registration number for the Mexican IRS)
Should it just be added as a custom invoice field in this scenario?

Yeah it's documented here: https://stripe.com/docs/invoicing/customize#custom-fields Should be good for any compliance reason you need for your country
