If you have open invoices, and you don't want your customer to pay them, then you should void the invoices. https://stripe.com/docs/api/invoices/void

Is it possible that stripe tries to pay a very old open invoice (months ago)?

Maybe when the customer changes its payment method

This can happen, for example if the customer got an email with the invoice to pay, and they end up paying weeks/months later. To avoid that, we recommend voiding the invoice.
