It looks fine when I review the logs, but some payments do not show it on the dashboard.
I'm confused about this statement. The logs are in the Dashboard, so where specifically are you seeing the statement descriptor appear incorrectly?

It is incorrect when I view the payment under Payment Details > Statement descriptor.

Payments made with JCB cards do not support custom statement descriptors and will only show the default statement descriptor set at Stripe account activation.
