If you are missing data from 6+ months old(er), then that's because HYV's servers delete wish data after 6M, and hence Paimon Moe can not fetch it

#

If you're missing character/cons from events or shop- that's again because Paimon Moe takes data from wish history, and since you didn't get those from there- it didn't get shown up

HOWEVER, You can always edit manually and add those
