I have an older version of st installed, but I can't run it because of the new update. If I disconnect from the internet before starting using that older version, it lets me, but if I'm on the internet, I'm forced to update (which causes the crash). Is there a way to bypass the checks for newer mandatory versions

No just keep your mods updated and enable auto update where possible
