Work on collecting all the references to MotionMatching Gem and workflow to extend the documentation

@hushed flicker Hey, I've been looking for any existing references to the demo files you fixes, like in the docs and such, and I can't find any.

Did you just find the demo files in the Gem folder information by just browsing it? Or did you find it referenced somewhere, because I can't find any references to it other than being in the Gem folder.

Ah, I took a closer look at the folder and there's two levels that come with the MM Gem, okies.
