I've got 70mins with my phone on the rosette nebula and I know I have some real data that I just do not know how to pull out, I've done a basic stretch to see that you can see pillars but in general I have no clue how to process this.

A quick stretch here. You are not going to get any of that red through with a phone camera. Even a stock DSLR needs a fair bit of integration time in order to pull out the reds.
