New to the game and the combo system worries me, not sure if I can remember it all. What's an easier starter class to try out? Is there a healer class that is a bit easier as well?

I'd say the easiest is Guardian

All classes can be played in simple way and complex way
Simple way is just focusing on few skills and pattern them
Complex is to use as many skills as needed, like in high end spots or maximizing the rotation speed
BDO does not really have DPS/TANK/HEALER roles
But for healing all classes have some of self healing skills
Shai, Wizard and witch are classes that has actual healing skills

Woosa received a healing skill buff/addition on the most recent patch as well, definitely was a fun one for me to come back to

Musa, Guardian, Dark knight, Valkirie should be pretty easy, then you have shai that has the less ammount of skills and is the "support" class.
I personally find the succession skill sets easyer on most classes (shai has just one skillset )

for me Dark knight and Valkyrie were pretty difficult compared to some others
but this is again an opinion based answers we are giving

valkyrie is definitely not an easy class, too clunky. the dash into guard is not nice
