I think Duke fits what you're looking for really well. There's space in your schedule to explore your interests outside of engineering, a lot of people explore double majors or minors.
I know University of Rochester is super interdisciplinary, idk much about their mechE or fsae programs
Stanford could be a play
they seem to love entrepreneurs and peopel focused on teh humanities if im not misinterpreting their website
and also harvey mudd
idk how much they align with this, but my frien got in with an applciation bassed entirely on engienereing and hnumanities with project design
