Looking through the TV shows that have been requested it seems that once a request has been fulfilled and marke available/partially available, the requests seem to dissappear. I can no longer see who requested it. For the shows that are still processing/unavailable I can see who requested it. Go to the users history I can't see the TV show requests either. Is intended behavior?

Your connection to plex is broken
Can you go to settings > plex and press sync libraries button
I had already fixed that. The auto configuration was pulling in the docker network address which changed after a reboot. I replaced this with the lan IP and resynched the libraries.
Would this cause the tv requests to be deleted? The movie request appear fine.
Yes. Media availability sync job in 1.34.0 did not have any guard against when plex was down which would go and remove status and related requests this is fixed in seerr and should be available in seerr release
Could you go to jobs&cache
Then run media availability sync job
And send lofs

Request sometbing a tv show
Then run this job
And check if that request gets removed now
I just processed 2 requests for a total of 3 seasons and reran the job and they are still available. Thanks for the assistance. A few questions to close this out.
I assume there is no way to recover these requests barring a backup from before the connection was lost. Why was only TV shows affected and not Movies?
Is Seerr at feature parity with Overseerr at this point? Is it recommended to migrate.
Does Seerr use the same API as Overseerr? Would the Seerr api continue to work with third party apps like Maintainerr.
I do have a back up from a few weeks ago that appears to have the missing data in it, but unless there is a way to merge that with the current db, I'd rahter not lose any new requests that have come in since the issues appeared.
