Your plex is offline
This happens when a large quantity of content is added in one go
Plex processes each and every files for credits, intro skips , etc
If your server isn't able to handle it, it goes offline
In this case, maybe you have not allocated more space for your docker data
Plex is working just fine though (as plex) and I can't find any part of docker that has any type of allocation, the rest of my containers look great, and the locations of docker/portainer files are on volumes with a lot of space (unless I'm looking at the wrong items)
I've fully deleted, recreated the stack - can not get it to authenticate. I've also rebooted plex server (which is running fine).

Maybe this is just an overseerr issue that I have to wait on? I'm surprised i cant' get a fresh compose/stack to spin up.
Wouldn't portainer or docker show some type of space alert? All other containers reporting ok. Not sure where else to check
Plex going offline makes sense but it being offline and that stopping a fresh setup is odd to me
