I'm on windows, I used docker desktop, I have a tar of the container that worked fine albeit super slow
I have the docker command that docker desktop told me it was using
docker run --hostname=13a50684b0ca --env=PATH=/usr/local/sbin:/usr/local/bin:/usr/sbin:/usr/bin:/sbin:/bin --env=NODE_VERSION=18.18.2 --env=YARN_VERSION=1.22.19 --workdir=/app -p 5055:5055 --restart=no --runtime=runc -d sctx/overseerr:36283f214a68192a8d32f25e4148beac04ddda14

I dunno what to do, I've always been a poweruser but I feel so over my head, and I'm super stressed because my overseerr was a huge hit amongst my friends, and I was really really proud of it
I've got the tar uploading to pixeldrain, I'll append it to this as soon as it's done uploading

The auth failure would happen there

It maybe where there is an issue with overseerr communicating with Plex. Secondly, can you log in using the local user and verify that it can communicate with Plex

If you have access to another machine that has Docker, I'd try installing it on there
If it's still slow there, there's something funky with the network, be it local, or something between your instance and TMDB
If not, there's probably some networking config that's on your machine that's making things slow
