Is there a way to run the 'Media Availability Sync' job via the api? There's a 'Run Now' button so I'm hoping I can hit that somehow?

Yes -- everything you do in Overseerr frontend uses the API.

I dont suppose you know what the API URL is for that particular job do you? (or better still, how I'd find a URL for the job)

The docs state 'settings/jobs/{jobID}/run

but I cant see the job ID anywhere?
