I recently lost all my content from my server and Plex is on a different machine and still has its database. I have Overseerr, Radarr and Sonarr all set back up as those were on a VM on the same server on TrueNAS. Is there any way to use Overseerr to repopulate Sonarr or Radarr to get them to start downloading content again or would I have to push lists to Sonarr and Radarr in stead? I’m just trying to find the easiest way to reclaim my content.

Overseerr only sends requests to the *arrs at the time requests are approved, so no, not possible out-of-the-box.
However, I imagine you could leverage the Overseerr API and write a script to accomplish this.
