I recently started learning Japanese and I know Hiragana and some basic greetings and other words, should i already be immersing without subs or should I keep them on? Should I be immersing or am I wasting my time at my current level?

As a beginner, we recommend using Japanese subs. And you should be immersing from essentially day 1. Time spent with the language is only a benefit, not a waste.

There is a playlist with content that is understandable for absolute beginners in #tools-starter-pack

Also, please read the roadmap that is linked in that channel so you can understand the methodology better.
