I'm a week into learning and some kanji just wont stick to me no matter how many times I see it in Anki (Core 2.3K) it discourages me. I do 1-2 hour of immersion a day and cant seem to hear those words at all. Was that normal for you too?

Yes, you're a week in. You've still barely started. It's a very normal experience. Just keep going, watch shows with Japanese subtitles, do your best to read them as the characters are talking, and it will get better.

Also, since you're early on, it would be way better if you switched to the Kaishi deck and dropped Core. Kaishi is a much newer and better deck that fixes problems that Core 2.3k has, such as just straight up incorrect translations and example sentences. You can find the Kaishi deck in #tools-starter-pack along with a lot of other very helpful tools and resources that I strongly suggest you look at.

Thanks, my mind is pretty impatient, i hate it but can't stop it lol. I'll try this, so far it's been giving me more useful words than Core.
