We recommend only having 1 mining deck, I don't see why you would want to have 2 mining decks, one for vocab cards and another for sentence cards. It's better to only have 1, in which you choose to only have vocab cards or only sentence cards (this is only a matter of preference).

To change the default note type and deck, go into yomitan settings, anki, configure anki card format

Besides what Paashii said, this is not necessary this way anyways. You can multiple templates to your note type and controlled by one parameter it can generate different cards. If you think having word and sentence cards will help you, you should give the anki docs for notes and cards a read
