Should I mine everything I can out of an episode/video (Essentially creating a backlog of cards for me) or just solely mine the amount of cards that take in a day? (15)

You should mine high quality sentences regardless of the number. You shouldn't be trying to mine as many sentences as possible to hit an arbitrary quota. That's going to lead to mining some bad quality cards. Some days you might mine 2 quality cards, some days it might be 20, and both scenarios are ok.

Ah okay! I find myself wanting to mine alot more than 15 cards because I enjoy it alot and I see a lot of good stuff. In any case that's good to know!
