If I have a definition thats wraps all the textContent, can do something in Yomitan so that when the note gets created it strips all the html and only pastes the textContent of for my definitions?

It would be doable with very bloated templates and then using that field as the whole card, but the limitations (e.g. adjusting the template later or ankis build in functions with filters, notes and cards) are not worth it imo
Oh, I think I misread your question… stripping all content should be doable by just using another variable that is not decorated. Otherwise JavaScript or css can help getting rid of unwanted styling
