Is this an Anki font or is it a computer font? (I changed the computer font a few months ago, maybe it fell off?)

You should be able to change the "Editing Font" in Anki but you can only select one, so if that symbol is not in the selected font your computer's fontconfig takes over.
Go to Tools > Manage Note Types > your note type > Fields then change the Editing Font for each of the fields

Or figure out how to configure fonts on your computer (it's hell)
