So I have the JP1K v3 deck and it mentions that I should first recall the reading, then peek at the reading, and then only grade based on whether I got the meaning of the card correct. The problem for me is that I'll very frequently forget the reading of a card (and the meaning along with it) but as soon as I hear the reading I'll remember the meaning. Should I fail these cards because I can't recall the reading or should I pass those cards because I was able to recall the meaning once I heard their reading?

As long as you remember the meaning before you flip the card to the back, pass the card. The information on the front is there for a reason. So if you remember the meaning with the help of any of the information on the front, pass the card using the "good" button
Wouldn't that do me a disservice in a purely reading context though?
No. Words don't live in Anki. You will be doing immersion outside of that where the words will be reinforced through reading anyway with Japanese subtitles. And if you're not already immersing with Japanese subtitles, you should be.
