When to start making Anki flash cards?

When is it recommended that I start adding my own new cards based off of immersion? I know sentence mining starts in stage two, however, should I also not be making new cards at all in stage 1? For instance, when I see a new word that stands out and look it up while immersing, am I just supposed to note it in the back of my head and move on?

Basically yeah. Just look it up and move on. Making cards in stage 1 is not recommended for many reasons. Unless it's an extreme situation where your premade deck is boring you so much that it's making you want to quit entirely.
