No worries. You're not the first Japanese Refolder to feel that way. I recommend picking up a gap filler deck like Core 2.3k while you slowly dip your toes into sentence mining. Pick a workflow you like, set it up, and just be on the lookout for good i + 1 sentences while you immerse normally. Since you have the gap filler deck, you can really go for quality over quantity for your cards without the pressure.
