Basically, I'm getting very close to the end of my sentence mining deck, and I've realized I'm making less than ten cards daily while studying ten new ones each day. That said, I'm very consistently finishing one episode in an hour, which is a time I'm pretty satisfied with. Is this something I should worry about, or am I worrying too much?

Do you only do intensive immersion?
Taking 1 hour to watch an episode is fine for intensive but free flow immersion is important as well, if not more than intensive
When you watch an episode free flow I think you might be able to find more i+1 sentences, because it takes less time to cover more material
But to answer your actual question running out of cards doesn’t really matter, no need to make crappy cards to fluff out your deck
Sometimes we make more cards and sometimes less, it’s ok to do less than 10 a day
if you're worrying about how many cards you should make a day I say how long is a piece of string
If you find yourself having trouble making 10 new cards a day, I recommend lowering your new cards per day setting in anki to accommodate that. If you find yourself making less than 10 cards a day sentence mining, I would set your new cards per day in Anki to 5 so you're not stressing out. This also allows you to make more quality cards because you're not chasing a quota
Definitely aim for quality over quanitity with the SRS. Remember, it's just as supplement to get your brain looking for words in the actual immersion.
Wait, but I thought I was only supposed to mine sentences during intensive?
Alright, understood. 
You can still mine during freeflow. It's just most common to mine during intensive since you're already looking stuff up anyway

sounds to me like an oxymoron since you'll be pausing and pulling up a dictionary while watching
intensive vs freeflow doesn't mean 100% lookups vs 0% lookups. It's a spectrum.
