The 2B guidelines say that I should start intensively immersing with adult shows. I'm having trouble finding adult content on Netflix that doesn't disturb me since most of their TV-MA anime is really violent.
When it comes to intensive immersion: Is it better to watch something simple that I enjoy, or something challenging that I dislike? Will not watching adult shows slow down my progress?

When the roadmap says adult shows, it just means show that aren't for little kids. So anything that isn't Doraemon or something is fine. Don't overthink it.
It's not really a great idea to keep watching stuff aimed at little kids when it's not appropriate for your level anymore. You need to continue increasing difficulty ever so slightly in order to progress. Think about the concept of i + 1.
2b is all about just following your interests though, so like Kirnic said, use whatever you enjoy as long as it's level appropriate.

Thanks for the explanation! Just to make sure I understand correctly: At 2B something like Naruto or Cardcaptor Sakura would be ok as long as it's more advanced than something like Doraemon or Hello Kitty?
