I just wanted to reach out for opinions and observations on what could be the reason GitLab appears to cause these errors or how to get to the bottom of what is causing these errors.

Do you have enough memory allocated to the GitLab server?

Yupp, the VM running it has 32GB total and usually sits at around 24 with everything running.

Gitlab is running as a docker container in case this changes things
