your recording settings are bad.

#

you get a constant bitrate of 2500 kbps, it is very low.
as soon as your scene becomes more dynamic the bitrate can't keep up and makes your video blocky.
increase your bitrate, use settings from https://ctt.cx/video/obs/output/.
