This keeps popping up even when I take all the mods and assets out it does this, I also deleted the game and downloaded it back

Well 8 GB Ram is the minimum for this game, recommended are 16 GB RAM
(both without Mods or assets)

and this is for Windows, looks like Mac needs less

But as you said, you tried without mods and assets, so you should be fine. So I do not know
