There's another theory about endermen: They are the Ancient Builders who, when visiting the End, became infected by the Endermite while eating chorus fruit: enderpearl are endermite eggs. And they had the endermen form after being trapped in the End after respawning the dragon, their body adapting. So endermen have no direct relation with the wither, because endermen are the final form of the Ancient Builders. In that theory, the wither was created because some Ancient Builders got the Wither illness and when they died, the Ancient Builders who were trying to create life, used their skull, combined with Soul Sand, which contain soul energy, to revive their friends. But they created a killing-machine monster. So after they killed it, they didn't know what to do with the Nether Star, because we can't find normally generated beacons (Or the soul energy has run out). But many years later, another generation of Ancient Builders decided to use the Wither to enchant their gear in the Deep Dark, precisely with the artificial catalyst in the center of the Ancient Cities.

Because before the end was locked the ancient builders were travelling between dimensions to share their discoveries and gave the chorus fruits to other builders
And they were locked in thé end because they were constantly respawning the dragon to make new elytras

but with the theory that endermen are infected builders, the end portals are built with endstone, so how could they have gotten end stone without access to the end?
i suppose it could be possible that they just destroyed the original portal they made to the end, to the end, and make the other ones with endstone because it is more effecient?
