So I’m about to start dming a campaign I made in a few weeks, and part of the story is the party visiting four different dungeons, but I’m having trouble figuring out how many hit points I should give the final boss of one of them. This is because any of the dungeons can be visited first, so I don’t want to give him too much hp, how much should he have?

There's a CR calculator table from the DMG
It gives ranges for how much monsters of a specific CR have
Notes as a guy who's homebrewed a few monsters:

AC and HP are inversely proportional. The higher the AC, the lower the HP should be. It's not fun having to deplete a bag of hit points if you're missing half the time.

Give only enough HP to survive three rounds of the players going at it with about 75% of their full power (account for the fact that they will miss from time to time). Assuming you've worn them down properly with encounters prior to the boss and whittled some of their resources down, a good fight should take three to six rounds. Three is a good number, four is okay, any more and you're going to have a slog.
