I've seen many questions online about this one and I can't seem to get it to work.
I've grabbed the letter before the floo flame, and I've cast lumos on every part of the Forbidden Forest bridge (at night) by the floo flame. Nothing happens. I've also tried the bridge past the main bridge.
Help? Which bridge is it and is there a trick I'm missing?

It should be at the stone bridge, right where you pick up the letter to Apollonia. Also, make sure that it's well and truly nighttime, sometimes even if it's dark out the game doesn't register it as being 'night' yet; this also happens with the astronomy tables.

I haven't unlocked those yet but good to know!

I swear I've done the quest in broad daylight once... No idea how, though; never been able to replicate it.

Should be, but if it doesn't work you can force another day cycle to be sure
