I completed the quest to get it by accident without trying to am I somehow able to restart again to that point and get it that way or do I have to create a brand new character and start over? (Fyi I'm on PS5)

As long as you don't ||turn Sebastian in||, you can learn it at any point by finding Sebastian in the Undercroft later

I'm also puzzled as to how you 'accidentally' completed the quest since you kind of have to go out of your way to do it
