Are there specific quests exclusive to those not on the Nintendo switch? I want to complete the minding your own business quest but Google says Nintendo switch users can access it but I have not come across it nor others I've seen

That information is extremely outdated, the Minding Your Own Business quest was made available to everyone else last Summer.

Anyways, it's not exclusive anymore and there are no other exclusive quests.

No. Minding Your Own Business was a PlayStation exclusive for a limited time after the release of the game, after which the quest was released to all platforms. It was the only one.
