According to the Map there should be one Demiguise in the West-wing. And I did find one as part of the side quest, in the hospital. So that should be the only one. But the map still says Demiguise statues 0/1. Could that be a bug?

The mandatory moons from quest are not included in the count. The one you're looking for (I'm guessing it's the south wing on the map) should be in the locked bathroom (the one with revelio page)

Is that the posh boys bathroom? I can't remember it was locked but I do remember finding a statue there , plus the page

It is the only statue there, if that one doesn't count then it's possibly a bug

You can try load a previous save to make sure if available
