If I sell a piece of gear I am using as an appearance - would I lose the option to use that appearance? I tried finding the answer to this on google but can't seem to phrase my question in a way where I find the answer - thanks in advance.

No. Once you find a bit of gear you can use its appearance forever even if you sell it. Hover over the bit of gear whose appearance you want to change and there will be a prompt at the bottom of the item card saying 'change appearance'.
