Title explains it. Finished breeding the thestrals but when I talk to Deek the mission isn't progressing. Anyone else had this or knows how to fix it?

A little odd. I assume you waited for the calf (do Thestrals have Calfs?) to be born?
If probably can't hurt to repeat the breeding process and see if this jump starts the quest. May also need to ensure the quest is being tracked from your Quests menu.
A few, rare times, I've had a quest stuck in limbo simply because I wasn't tracking it at the time.
