Generally recommended you be level 12+ for the fight (I have typically been around level 15). The best team for the job is Joker, Ryuji, Akechi, Anne, FeMC. Avoid Yusuke no matter what, since one of his carrots does Fire damage. Have Ryuji in the front row along with Joker or Akechi (if you're on Risky, it should be Akechi, otherwise it doesn't matter much). Everyone else goes to the back.
The carrot on the left side of the screen (misleading named "Right Carrot" because he's holding it in his right hand) is weak to Fire and Bless, the other one is weak to Electric and Curse. The team I recommended above can all do at least one of those elements, and you can use Sub-Personas to give each one the ability to strike with something that'll Weak-hit the other. It's also recommended you have a Sub-Persona that can use Poisma; debuffs are handy as well.
When the fight starts, inflict Poison on Kamoshidaman and focus fire on the left-side carrot, using the elements it's weak against. Have Futaba start using Mini-Recovery immediately, because it heals at the end of the turn, and you're gonna take damage. Ryuji should Line Guard. If you finished the map on the first floor, there's a reusable item that will restore 30 HP to him as well, which you can have someone spam on him every turn. Between that, and Mini-Recovery, he should stay standing. FeMC should use Fire Link if she's got a boost, but otherwise have her use Agi...the HP cost is too precious in this fight.
Once the first carrot's down, move on to the second. Replace Poisma or Mini-Recovery if/when either of them drop. Some people like moving Anne to the front line for this and having her do Line Guard, as the Carrot Bomb attack is fire element, so her natural resistance makes her decently tanky to it (plus Ryuji will have Zio for this phase). Whether you take advantage of this or not is kinda up to you.
After both carrots are down, assuming you've been keeping the poison in place, Kamoshidaman will probably be at around half health. He'll lose his resistance to all and gain a weakness to Fire. You can probably guess where that's going. Burn him hard, but do not use an All-Out Attack. If you do, he will immediately get up and cast Fire Screen, negating his weakness. If you don't AoA, there's still a chance he'll get up and use it, which is dependent on difficulty (on Hard it happens pretty frequently, on Easy it never does, on Normal, well, somewhere in between...I was on Normal on my last run and he never got up). As long as he doesn't Fire Screen, you can basically take advantage of boosts to keep him on his back for the rest of the fight. If he does get to attack, be warned, he hits harder when the carrots are gone, so make sure Ryuji has Line Guard ready to go, and be prepared to heal him intensely if needed. Continue to keep Poison on him, as it does massive damage.

- very quick at-a-glance understanding of the power level itself
- another way i do that is by giving the skills their own grading, so that multihits' relative power are more easily understood because the damage formula is stupid (i also am doing this to incentivize use of skills that may not seem as strong by giving them high ratings)

- more accurate info for players that need it, without having to alt tab to the spreadsheets
- which in turn allows for less clunky micro'ing when choosing skills

Yokai watch the series and in general a lot of Yokai legends are exactly that. I watched a good chunk of the tv show for fun for a ffxiv crossover. I love ancient Chinese and Japanese legends especially the nine tailed fox.
A lot of Personas are based on Yokai although they also lean heavily on Gods and Goddesses from Greek and Roman myth as well.
But that would be a lot of fun in Persona! You could even have one unique troublemaker be a rare spawn quest chain.

I do think for Q it's worth playing both games to get a better understanding of their gameplay before you really start thinking of concepts (and of course the modding communities are incredibly small) but there are also a lot of interesting things that could be done with their systems. honestly I wish some of that like the navi system could be in mainline
if your goal is light rebalancing then there's certainly some stuff that could be thought of but both games already have balance mods. if your goal is light faithful writing changes (which is what I'd personally fw and see as a unique interesting niche) I think I have more to say particularly with P4 (bc I think about that game more lol)
