Whenever I'm crafting source gems or source blocks it doesn't show the craft time as it used to in previous versions. This also happens for crafting essence or anything else on pedestals.

Unfortunately 1.20.1 is no longer supported, so this won't be fixed, it should be fine in 1.21

Think I found a fix for it if it's happening in a multiplayer server

What's worked for me multiple times is joining it then leaving going into a single player world leaving and joining server again
