and, you do know that once you trade once with a villager, it cant change professions or trades again?
thats a vanilla feature
(at least, thats what im assuming you meant by your question)
so, if you want to keep changing a villagers professions or trades, dont trade with it. trading with the villager locks everything in

The problem is that the villagers register a trade without anyone actually trading with them. They lock into their professions for no real reason
