As of the recent 1.21.8 update certain drop tables in my datapack cause two of the same item to drop despite it only being set to one. Below are two drop tables. In this particular case the Enchanted Book drop and Legendary loot drop table keep dropping twice:

The legendary loot table always drops two of a single legendary despite it should only drop a single one.

The Generic drop table keeps dropping multiple of the exact same enchanted book
