java.lang.NoClassDefFoundError: Could not initialize class gg.essential.config.EssentialConfig
- (about your mod list) gross, use FermiumASM instead: https://modrinth.com/mod/fermiumasm. is that other mod you downloaded even on modrinth??

honestly, i would just start with what you mentioned there. get the main mods you want in the modpack working to the best of your ability, before trying to squeeze in client-side mods like Essential (especially if they are mods with potential for incompatibilities).
Everyone starts from somewhere when learning to do stuff like make modpacks. I am not sure if people will take you up on your offer to commission a modpack, maybe there are better places to ask but I don't know where.
However if you post for help here with your crashes, at the very least you can get people to try and help you through them.

If you are filling the modpack with curseforge mods, if you want to eventually upload the modpack to modrinth you should be careful because you may not be able to put the modpack on modrinth if you do not have permission from the developer/mod license to use one or more of the curseforge mods. (if it's just for personal use then you can do whatever)
To answer your second question, please replace CensoredASM with FermiumASM

also actually reading the mod description of FermiumASM gives you enough information to understand why I suggested it - it has better compatibility with other mods, for a more concrete reason as to why you might want to switch over.
the description above provided by rowan is for NormalASM which that is the only changes to the original mod, but FermiumASM goes beyond that
