So the issue is easily fixable (outdated NBT API version bundled in the menus library) but the Spigot repository is down right now so I can't build the menu library that contains the fix. I'll have an update out by tomorrow though assuming Spigot is fixed.

Looks like you use CustomModelData a lot, which is the part that needs the up to date nbt api. If you really want it to work now you can remove the nbt: CustomModelData parts but this could be a pain to put back once it's fixed.
